Black Bean Soup – Really easy

This is a recipe from my friend Julie. My Mom and Dad really love this oh-so-easy soup.

2 15.5 oz cans of black beans drained

1 1/2 Cups Vegetable Stock (or Chicken Broth)

1 Cup prepared Salsa Verde (I will make this with red salsa too.)

1/4 Cup Cilantro Leaves

1 tsp. ground cumin

Garnish with lime wedges, diced green onions, avocado slices, tortilla chips, sour cream and chedder cheese. (You can use Vegan alternatives.)

Put it all in the blender (except the garnishes) and blend until smooth. Pour it all into a saucepan and simmer for 10-15 minutes. Serve it up and put on the garnishes.
